Homemade Fish Bites

Ingredients
2-3 eggs, lightly beaten
1 cup milk
1 cup all purpose flour
1 tsp salt
1 tsp pepper
1/2 tsp cayenne pepper
2 cups Italian breadcrumbs
2 tbs dried basil
2 tbs dill weed (optional)
2 tbs onion powder
2 tbs garlic powder
1 tsp dried oregano
2 tsp lemon pepper
4 cod fillets cut into 2 inch chunks
Recipe
- Preheat the oven to 400 degrees and grease a baking sheet.
- Whisk together the milk and eggs in a flat dish.
- Put the flour, salt, pepper and cayenne in a flat dish.
- Combine the breadcrumbs, basil, dill weed, onion powder, garlic powder, oregano and lemon pepper into a flat dish.
- Begin dredging the fish in the following order– egg mixture, flour, egg mixture and then breadcrumbs. Place it on the baking sheet. Trust me with this order with coating! It’s going to give it such a nice thick coating.
- Do this for each chunk of cod.
- Bake in preheated oven for 10-15 minutes. Do not overcook.
